Low-FodMap Bolognese

with roasted carrots, wilted spinach, and polenta

Ingredients for Bolognese

  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 1/2 can tomato paste
  • Juice of 1/2 lemon
  • 3T sugar
  • Splash white wine (if that’s what you’d like)
  • Salt & Pepper to taste

This is super easy for me to whip up when there’s nothing in the fridge that I can eat.

Medium heat pan with a circle of olive oil.  Brown beef, add tomatoes, and combine.  Add juice of lemon and sugar, wine if you’d like. Once it starts to boil, simmer for 30 mins.  It will thicken (like above pic).

Roasted Carrots

I add carrots for the sweet factor.

Preheat oven to 400*F. Peel carrots, cut and drizzle with olive oil. Toss with salt and rosemary**.  I add a little sugar to help with the roasting color. Cook for 15-20mins until they are soft but not mushy.

**We have an herb garden in our backyard, so we use fresh herbs.  The garden was my mom’s idea.  She’s cool like that.

Polenta

I think buying things in a tube is weird, except for polenta.  It’s easy and I can eat it, so it works for me.  It’s like cutting tubed cookie dough.

Heat oil in pan over medium heat.  Fry polenta until golden brown, on both sides.

(I add wilted spinach for color and bitterness.)
